Simple Saffron Syrup (for Pancakes, Waffles & Cocktails)

This stunning golden syrup is your secret weapon for adding a touch of luxury to everything from weekend pancakes to Friday night cocktails. With just three ingredients and 10 minutes, you'll have a versatile syrup that keeps in the fridge for up to a month.


Ingredients

  • 8-10 strands Argyle Australian Saffron (or a good pinch of ground saffron)

  • 1 cup (220g) white sugar

  • 1 cup (250ml) water



    Optional additions:

    • 1 strip of lemon peel (for citrus notes)

    • 1 cardamom pod, lightly crushed (for an aromatic twist)

    • Quarter tsp rosewater (add at the end for floral notes)


Method

  1. If using saffron threads, lightly crush them using a mortar and pestle or between your fingers. This helps release maximum colour and flavour. In a small saucepan, combine the crushed saffron threads, sugar, and water. Give it a gentle stir to combine. Let this sit at room temperature for 30-60 minutes. The longer you steep, the deeper the colour and the more intense the saffron flavour will be.

  2. Place the saucepan over medium heat. Stir gently until all the sugar has completely dissolved. You'll see the syrup start to take on that beautiful golden colour from the saffron.

  3. Once the sugar is dissolved, bring the mixture to a gentle simmer. Let it bubble away for about 3-5 minutes. Don't let it boil too hard or for too long, or it'll thicken too much.

  4. Remove from heat and let it cool to room temperature. You can leave the saffron threads in for a beautiful look, or strain them out if you prefer.

  5. Pour into a clean glass bottle or jar with a tight-fitting lid. Store in the fridge for up to a month.


How to Use Your Saffron Simple Syrup

For Breakfast:

  • Drizzle over pancakes, waffles, or French toast

  • Stir through porridge or overnight oats

  • Sweeten Greek yogurt with fresh berries

For Drinks:

  • Add to cocktails (try it in a gin and tonic or champagne)

  • Mix into mocktails with lemon and soda water

  • Sweeten iced tea or cold brew coffee

  • Create a saffron latte by adding to hot milk

For Desserts:

  • Brush over cakes while still warm

  • Drizzle over vanilla ice cream

  • Use in place of regular simple syrup in any dessert recipe

For Savoury:

  • Glaze for roasted carrots or parsnips

  • Drizzle over roasted figs with goat's cheese
